Peter Gast (29) wist, na een periode in Londen en bij De Librije, dat hij samen met Jacqueline zijn eigen restaurant wilde beginnen. Dat werd ’t Schulten Hues in Zutphen waar Peter, toen hij 26 was, zijn eerste Michelinster kreeg. Portfolio wordt gemaakt om te laten zien wat hij tot nu toe gedaan heeft, zoals een modeontwerper of fotograaf zijn werk laat zien. Want Portfolio is een kookboek én een culinaire presentatie. Het is een boek over passie en ondernemerschap, ambities en frustraties, de druk van een Michelinster en een veel te kleine keuken. ‘Ik word nergens koud of warm van’, zei Peter bij de eerste besprekingen over de inhoud van Portfolio. Maar zijn ambitie en gevoel voor perfectie heeft hij in het vervolg van het project niet verborgen kunnen houden. Toen hij wist dat dit boek gemaakt ging worden, heeft hij een nacht wakker gelegen omdat hij zich afvroeg hoe foto’s kunnen laten zien hoe een gerecht smaakt. Het resultaat is een eerlijk boek met rauwe zwart/witbeelden tegenover frisse, kleurige gerechten en recepten.
