Deze vlees- of worstspecialiteit overtuigt door traditioneel vakmanschap en past bij schotels, tussendoortjes en antipasti. De weiden waarop de varkens van de Iberische Bellota Cinco Jotas worden grootgebracht, bevinden zich in het zuidwesten van het schiereiland, met name in het natuurpark Sierra de Aracena en Picos de Aroche Huelva. De varkens grazen het hele jaar door in volledige vrijheid op deze weiden, waardoor ze tot 14 kilometer per dag afleggen en zo een smakelijkere en zachtere ham opleveren. Ze eten bijna uitsluitend eikels en natuurlijke grassen die op de weiden voorkomen. Hier groeien voornamelijk steeneiken, gal- en kurkeiken, die verschillende soorten eikels leveren voor de voeding van het varken. Met een vleugje eikels, vochtig gras en tijm betoveren de aroma's uw zintuigen en zorgen ze voor een gastronomische ervaring, nog voordat de ham op uw tong smelt.
