100% Chardonnay

De Torricella Chardonnay is gemaakt door de meest representatieve wijnproducent in het Chianti Classico-gebied, namelijk Barone Ricasoli. Deze wijn straalt helderheid en elegantie uit, heeft een strogele kleur en ademt aroma’s uit van rijpe perzik, sappige ananas en een vleugje vanille. Hij heeft een levendige zuurgraad en een zijdezachte textuur. De ideale balans tussen frisheid en diepgang.

Perfect te combineren met romige pasta’s, gegrilde visgerechten en zachte kazen.

Klimaat
Het klimaat is Toscane is uitermate geschikt voor deze druifsoort, alleen moeten de druiven dan wel op tijd worden geplukt. De weersomstandigheden waren vrij ongebruikelijk tijdens de vintage van 2021. Ondanks de vorst van afgelopen april, de droogte in de zomermaanden en de vroege rijping van de druiven, is de kwaliteit uitstekend.

Ondergrond
De ondergrond is samengesteld uit zand en rotsen, goed gedraineerd en voorzien van weinig organisch materiaal. De wijngaard is gelegen op meer dan 400 meter boven zeeniveau.

Vinificatie
Na de handmatige oogst worden de Chardonnay druiven zacht geperst. Er volgt een koude maceratie bij 5°C gedurende enkele uren zonder zuurstof. De fermentatie gebeurt in roestvrij staal bij 12°C-16°C gedurende 30 dagen. Vervolgens volgt nog een rijping van 9 maanden in eikenhouten vaten (waarvan 20% nieuwe) met een frequente batonnage.

The historical context that the author brings through first hand experience is beyond a treasure trove. It has been said many times in cheezy ads, but honestly, if you only read one book on Cyber Security make it this one.
