Story:

This is Oregon Pinot Noir, as I see it, through the lens of Burgundy and Beaujolais and everything in between.

Pairs:

Beef Bourguignon, Baked Sweet Potatoes, Chocolate Mousse 

Techniques:

Semi-carbonic maceration in both stainless steel and concrete for around 14 days. Pressed to barrel and élevage for 11 months. Small SO2 add after malo. Bottle aged for a year before release. 

Serving Temperature:

55° to 65° Fahrenheit

Farmed with one site Certified Organic by Oregon Tilth and two sites farmed organic without certification
