The Domaine now has 37 hectares across all levels of Chablis and is run by Jean’s son, Gilles along with Dominique, his wife and Romain, his son. 


For the Montmains Premier Cru, fermentation takes place naturally in stainless steel vats. The temperature is kept under 10-13°C for the first ten days – then the temperature is allowed to rise naturally for the rest of the fermentation, without being controlled. There is no lees-stirring, and malolactic fermentation is completed. This wine is crunchy and mineral with an attractive salinity and gorgeous finish. It would pair beautifully with seafood.
