Wie wird schwarzer Knoblauch bzw. Zitrone hergestellt?

Beim schwarzen Knoblauch handelt es sich um den normalen weißen Knoblauch, der auf natürliche Weise in jahrhundertaltem, aufwändigem Verfahren fermentiert wird. Das bedeutet, dass die Knollen während rund 90 Tagen permanent einer Temperatur von 70 Grad und einer Luftfeuchtigkeit von 80 bis 90 Grad ausgesetzt sind. Dabei erzeugen Zucker und Aminosäuren des Knoblauchs während des Gärprozesses Melanoidine. die für die schwarze Farbe verantwortlich sind.

Schwarze Zitrone wird durch ein Verfahren mit kontrollierter Feuchtigkeit und Temperatur gewonnen, bei dem die frischen andalusischen Zitronen ihr ganzes Aroma entfalten und reifen. Die schwarze Zitrone hat einen hohen Anteil an Ballaststoffen, Vitamin C und Kalium.

Gut für die Gesundheit

Schwarzer Knoblauch beinhaltet B-Vitamine und ist ein sehr guter Proteinlieferant. Eine schwarze Zehe hat in etwa die 10 fache Wirkung wie eine normale Zehe weißer Knoblauch. 

Geruchslos

Aufgrund des Gärprozesses geht der typische Geschmack verloren. Er ist komplett geruchslos und erzeugt keinen Nachgeschmack, also auch KEINEN MUNDGERUCH.
